Why it works: Wheat and milk are a kitchen classic. They rank in the top 6% of all ingredient pairs, and cooks put them together in 2,418 recipes. Both carry (e,z)-2,6-nonadienal, which smells cucumber, melon. The science ↓
Whole Wheat Bread
Ingredients
Directions
Prepare the dough
Sift together the whole wheat flour, Rumford Yeast Powder, salt, and sugar.
Add enough milk to form a dough that is stiff enough to handle.
Shape and bake
Handle the dough as little as possible, shape it into a loaf, and place it in a deep, buttered pan.
Let it stand for 5 minutes before placing it in the oven.
Bake slowly, for a little longer than white bread, and protect the loaf by placing a sheet of paper on top, buttering the side that touches the bread.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Whole wheat flour
- Forms the structure of the loaf, with gluten-forming proteins giving it body.
- Rumford yeast powder
- Leavens the dough so it rises and becomes lighter in texture.
- Milk
- Adds moisture so the flour hydrates and forms a workable dough.
- Sugar
- Adds a little sweetness and gives the leavener food to act on.
The step that matters
Handle the dough as little as possible. Kneading or overworking develops gluten, which can make the crumb tough and dense. Light handling keeps the loaf tender and helps it hold its shape.
“What each ingredient does” and “The step that matters” were written by Claude from this recipe’s own method and reviewed in samples by CompKitchen.
