What each ingredient does

Pig's head
Provides the meat, skin, and connective tissue that give the set head cheese its body.
Corned beef pickle
Salts and cures the meat during the two-day soak, seasoning it and firming its texture.
Black pepper
Adds sharp, aromatic heat that seasons the meat through the final simmer.
Ground sage
Contributes earthy, aromatic flavour to the seasoned meat.

The step that matters

Pressing and cooling the mixture. The gelatin released from the simmered connective tissue sets as the liquid cools, so the mixture must be cooled fully and pressed firmly to hold its shape when sliced.

Swap the sage

How well each one fits the dish's main ingredients (pepper, beef):

  1. Rosemaryfits better
  2. Parsleyfits better
  3. Marjoramfits better
  4. Sagethe original

Fit is the average pairing score against pepper, beef. Candidates are from the same food group and used in at least 100 recipes.
