What each ingredient does

Chestnuts
Form the bulk of the pudding, giving a thick, starchy, paste-like body.
Boiled custard
Provides the creamy, egg-rich base that gives the frozen mixture its smooth texture.
Sweet cream
Whipped in, it adds air and richness, keeping the frozen pudding light and tender.
Maraschino
Adds liqueur flavour and, as alcohol, keeps the frozen texture softer.
Citron
Adds candied citrus flavour and chewy texture through the pudding.

The step that matters

Freezing and beating in stages. Freezing the mixture fully before adding the whipped cream and fruit can leave it icy and dense. Repeated freezing with beating between rounds breaks up ice crystals and keeps the texture smooth.

Swap the raisin

How well each one fits the dish's main ingredients (chestnut, cream, pineapple, vanilla):

  1. Strawberryfits better
  2. Coconutfits better
  3. Figfits better
  4. Raisinthe original

Fit is the average pairing score against chestnut, cream, pineapple, vanilla. Candidates are from the same food group and used in at least 100 recipes.
