Ingredients
- 3 pints sweet cream
- 8 ounces sugar
- 1 cup madeira or raisin wine
- 2 thin jelly cakes

Place the jelly cakes in 2 glass bowls.

Whip the sweetened and flavored cream until half is froth.

Pour the liquid cream into the bowls.

Top with the froth and add spots of red jelly or colored cream on the surface.

Serve with a silver ladle.
