Madeira Wine Sauce

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Crumble the bread finely by grating or chopping.

  2. Grate the lemon rind and squeeze the juice into the sugar.

  3. Beat the egg yolks and add them to the milk along with the sugar.

  4. Stir in the melted butter and pour over the bread crumbs.

  5. Mix well and transfer to two buttered milk pans.

  6. Bake at 350°F (175°C) for about 30 minutes.
