Galantines of Quails

Ingredients

Directions

  1. Pound the pork tenderloins, cooked chicken, and fresh fat pork until smooth.

  2. Season with coarse sea salt and rub through a sieve.

  3. Cut the tongue, livers, bacon, ham, and truffles into small dice.

  4. Season the diced mixture with coarse sea salt or spices and stir in the wine.

  5. Bone the quails and wipe them dry.

  6. Place some meat over the thin parts of the quails and spread a little forcemeat paste on top.

  7. Add a layer of the diced mixture and fold the quails back to their original shape.

  8. Wrap each quail in a slice of unsmoked bacon or dry salt pork.

  9. Cook the wrapped quails in deep muffin pans or gem pans.
