Ingredients

Directions

The book says “a slack oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

  1. Make jelly slices as before, but instead of plain sugar icing, cover the large strips with stiff meringue.

  2. Dip a knife in hot water and cut through the meringue and cake to create narrow strips without displacing the meringue.

  3. Smooth the sides and top of each piece.

  4. Bake in a cool oven at 300°F (150°C) until lightly browned.
