To Dress Collops Quick

Ingredients

Directions

  1. Cut the veal into thin bits.

  2. Place the skin and odd bits in water with a dusting of pepper and salt; heat on the stove.

  3. Beat the collops and dip them in a mixture of herbs, bread crumbs, pepper, salt, and nutmeg.

  4. Wet the collops in egg, then fry in butter for 2 minutes on each side.

  5. Transfer to a hot dish and strain the gravy from the frying pan.

  6. Thicken the gravy, boil it, and pour over the collops.

  7. For added flavor, mix in catsup or simmer in gravy with bacon bits, lemon peel, mace, and sweet cream.
