Ingredients

Directions

  1. Mince the chicken, turkey, or other white meats finely.

  2. Make a thick sauce with butter, flour, and a little gravy.

  3. Add the minced meat to the sauce and stew it briefly.

  4. Season with mace, nutmeg, salt, and a pinch of cayenne pepper.

  5. Transfer the mixture to a plate and let it cool until nearly cold.

  6. Form the mixture into round balls and let them firm up.

  7. Roll the balls in beaten egg yolks and bread crumbs, repeating twice or three times until firm and the right size.
