Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pork
Provides the main meat body and fat that keeps the sausage juicy.
Veal
Adds a mild, tender meat texture to the filling.
Beef suet
Adds fat that melts during cooking, giving moisture and a rich mouthfeel.
Penny loaf crumb
Soaked in water, it absorbs liquid and helps the filling stay moist and bind.

The step that matters

Dry thoroughly. Drying removes surface moisture so the casing firms and the sausage keeps well. Insufficient drying leaves excess water that can spoil the sausage or make it soggy.

Swap the sage

How well each one fits the dish's main ingredients (pork, veal, beef, pepper):

  1. Sagethe original
  2. Marjoramfits about as well
  3. Thymefits about as well
  4. Parsleyfits less well

Fit is the average pairing score against pork, veal, beef, pepper. Candidates are from the same food group and used in at least 100 recipes.
