What each ingredient does

Leeks
Give the soup its main body and mild onion-like flavour as they soften in the broth.
Oatmeal
Thickens the broth as its starch swells and gelatinises during simmering.
Liquid from boiled mutton
Provides the savoury meat-based broth that forms the base of the soup.

The step that matters

Mixing the oatmeal smoothly into cold water. Oatmeal added as lumps or into hot liquid can clump, since its starch sets on contact with heat. Mixing it fully into cold water first lets it disperse evenly, so it thickens the soup uniformly.
