Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Give the drink body and a smooth, thick texture as they blend with the warm ale.
Ale
Provides the liquid base and its malty, bitter flavour that the sweetness balances.
Moist sugar
Adds sweetness and a rich, molasses-like depth that offsets the ale's bitterness.

The step that matters

Adding the hot ale to the eggs. Hot liquid poured straight onto egg can scramble it into lumps. Pouring gradually while whisking, and repeating the transfers, warms the eggs slowly so the mixture stays smooth.

Swap the nutmeg

How well each one fits the dish's main ingredients (egg, sugar):

  1. Cinnamonfits better
  2. Nutmegthe original
  3. Gingerfits less well
  4. Capersfits less well

Fit is the average pairing score against egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
