Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the beef

  1. Salt the beef with coarse sea salt and black pepper for 12 hours.

  2. Remove the skin and fat from the beef.

  3. Cut the lean meat into pound-sized pieces.

  4. Place the beef in an earthen pan or stone jar.

  5. Add butter on top.

  6. Cover with the removed skin and fat.

  7. Pour in water.

  8. Cover tightly with white paper and then brown paper.

Bake and strain

  1. Bake in a slow oven at 300°F (150°C) for 4 hours.

  2. After baking, pour the gravy into a basin.

  3. Discard the skins and fat.

Shred and pot

  1. Shred the meat finely.

  2. Moisten the shredded meat with the gravy.

  3. Pound the moistened meat in a mortar with clarified butter or beef marrow until smooth.

  4. Season gradually with black pepper and spices.

  5. Pack the mixture into pots tightly.

  6. Bake for a few minutes to smooth the top.

  7. Cool and cover with clarified butter.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef
Provides the meat that becomes the rich, tender, spreadable body of the dish.
Butter
Adds fat and richness, carrying flavour through the slow-cooked meat.
Clarified butter
Adds fat for a smooth texture and seals the top against air.
Coarse sea salt
Seasons the beef deeply during the long salting rest.

The step that matters

Covering the baking dish tightly. A tight paper seal keeps moisture in during the long slow bake, so the meat stays tender instead of drying out.

Swap the allspice

How well each one fits the dish's main ingredients (beef, pepper, butter, nutmeg):
