Giblet Sauce

Ingredients

Directions

  1. In a large pot, bring 4 quarts of cold water to a boil.

  2. Skim off any scum, then add the onion, cloves, mace, black pepper, allspice, and salt.

  3. Cover and simmer gently for about 2.5 hours until the giblets are tender.

  4. Remove the giblets and thicken the broth with flour and butter.

  5. Boil the sauce for 30 minutes until it thickens slightly, then strain it into a clean pot.

  6. Cut the giblets into bite-sized pieces and return them to the sauce.

  7. Stir in the lemon juice and mushroom catsup.

  8. Serve the sauce over sippets of bread in a soup dish.
