What each ingredient does

Young green peas
Provide the main flavour and body of the soup as they cook down into the pulp.
Large fresh green peas
Boiled in stock and pressed through a sieve to give the soup its smooth, thick body.
Veal stock
Supplies the savoury liquid base that the peas cook in and the soup is built on.
Butter
Melts to cook the vegetables gently, adding richness and carrying flavour.
Flour
Thickens the soup as it boils, giving it a fuller, more cohesive texture.
Turnips
Stewed in butter until soft, adding sweetness and body to the soup base.

The step that matters

Rub the peas through a fine sieve. Pressing the cooked peas through a fine sieve breaks them into a smooth pulp that thickens the liquid. Leftover skins or lumps left behind make the soup grainy.
