What each ingredient does

Pike or sturgeon
Forms the main body of the dish, cooked whole and held together by stuffing and sewing.
Breadcrumbs
Absorb moisture and butter in the stuffing and form a golden, crisp coating on the outside.
Egg
Binds the stuffing so it holds together during cooking.
Butter
Adds richness and moisture to the stuffing and helps the outside brown.
Capers
Add a sharp, briny acidity that cuts through the richness of the fish and butter.
Anchovies
Contribute savory depth and salty umami flavour to the stuffing.

The step that matters

Baking gently until done and golden brown. Fish is lean and cooks quickly, so overcooking dries the flesh. Gentle heat cooks the thick body through evenly while the breadcrumb coating browns without burning.
