Why it works: Mushroom and truffle are a kitchen classic. They rank in the top 4% of all ingredient pairs, and cooks put them together in 1,900 recipes. Both carry 2,4-nonadienal, which smells fatty, green. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Veal cutlets
- Provide the tender meat that forms the body of the dish.
- Lard
- Frying fat that browns the cutlet pieces and adds richness.
- Cullis
- Meat sauce that supplies moisture and savoury depth to the stew.
- Morels
- Add earthy, meaty aroma and a chewy texture to the stew.
- Blanched truffles
- Contribute a concentrated, aromatic flavour to the sauce.
The step that matters
Frying the cutlets until light brown. Frying in hot fat browns the surface through the Maillard reaction, building flavour. Overcooking makes the thin pieces tough and dry before the stew begins, so stop once they are light brown.
