Raised Beef Steak Pie

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Cut the skin from the fat of the beef steaks and beat them with a chopper.

  2. Cut the steaks into medium-sized pieces.

  3. In a pan, cook the steak pieces with butter, pepper, salt, lemon juice, and chopped eschalots until half done, then let them cool.

  4. Blanch the oysters, strain them, and reserve the oyster liquor.

  5. Prepare a pie crust and layer the steak and oysters alternately in the dish.

  6. Cover the pie, decorate it, and bake at 400°F (200°C).

  7. Before serving, add a good sauce made from the oyster liquor and ketchup.
