Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken breast
Provides the main filling body and savory protein for the puffs.
Lean ham
Adds salty, savory flavor that complements the chicken.
Béchamel sauce
Binds the chopped filling together and keeps it moist.
Puff pastry
Forms the flaky, layered outer shell that puffs and browns when fried.

The step that matters

Fry the puffs in boiling lard until golden brown. The fat must be hot enough to crisp the pastry quickly; if it is too cool, the puffs absorb grease and turn soggy, and the filling may not heat through before the outside over-browns.

Swap the mace

How well each one fits the dish's main ingredients (chicken, ham, anchovy, parsley, lemon, shallot, pepper):

  1. Thymefits better
  2. Capersfits better
  3. Tarragonfits better
  4. Macethe original

Fit is the average pairing score against chicken, ham, anchovy, parsley, lemon, shallot, pepper. Candidates are from the same food group and used in at least 100 recipes.
