Turkey with Truffles

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Truss the turkey as for boiling.

  2. Stuff the cavity near the breast with light forcemeat mixed with pounded truffles and secure it.

  3. Place slices of lemon, coarse sea salt, and slices of bacon on the breast.

  4. Cover with white paper and bind it with packthread.

Roast and serve

  1. Roast gently at 350°F (175°C) for one and a half hours.

  2. Before serving, remove the paper, glaze the breast, and pour truffle sauce around the turkey.

What each ingredient does

Turkey
Forms the main body of the dish, cooked gently to stay moist and tender.
Truffles
Provide a strong earthy aroma that flavours the stuffing and the sauce.
Bacon
Lies over the breast, where its fat bastes the meat and adds savoury flavour.
Light forcemeat
Fills the cavity, adding moisture and a tender texture to the bird.

The step that matters

Roast gently at 350°F (175°C) for one and a half hours. Low, steady heat cooks the turkey through without drying the lean breast. The white paper shields the meat from direct heat, so the breast stays moist while the stuffing heats evenly.
