Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Barberry juice
Provides the fruit flavor and tartness that the pickle is built on.
Vinegar
Acidity preserves the fruit and gives the pickle its sharp taste.
Loaf sugar
Balances the sharpness of the vinegar and juice with sweetness.
Salt
Seasons the pickle and adds to its balance of flavors.

The step that matters

Pouring the boiling pickle over the barberries. The pickle must be fully boiled before it goes into the jars, so that the hot liquid can help sterilize the fruit and keep it from spoiling. Letting it cool properly before sealing helps prevent condensation and spoilage inside the jars.

Swap the ginger

How well each one fits the dish's main ingredients (vinegar, sugar):

  1. Cinnamonfits better
  2. Tarragonfits about as well
  3. Peppermintfits about as well
  4. Gingerthe original

Fit is the average pairing score against vinegar, sugar. Candidates are from the same food group and used in at least 100 recipes.
