Angel Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. In an earthen bowl, combine the egg whites and lightly break them with a whip.

Whip the meringue

  1. Sift in the cream of tartar and beat until the mixture clings to the bowl.

  2. Gradually add the sugar while continuing to beat until stiff peaks form.

Fold and bake

  1. Gently fold in the flour and almond extract until just combined.

  2. Pour the batter into a prepared cake pan and bake for about 30-35 minutes, or until a toothpick comes out clean.

What each ingredient does

Egg whites
Whipped into a foam that gives the cake its light, airy structure.
Fine granulated sugar
Added gradually to stabilize the whipped foam and sweeten the cake.
Winter wheat flour
Provides the set structure that holds the cake once baked.
Cream of tartar
Acidifies the egg whites, helping them whip to a more stable foam.

The step that matters

Folding in the flour. Overmixing knocks air out of the whipped egg whites, so the flour should be folded in gently and only until just combined to keep the cake light.
