To Bone and Stuff a Turkey

Ingredients

Directions

  1. Singe, wash, and dry the turkey skin.

  2. Cut down the center of the back from head to tail.

  3. Scrape the flesh from the bones using a dull knife, working from back to breast.

  4. Remove the shoulder blades and bones from the upper wing and leg joints.

  5. Be careful not to cut the skin; loosen it from the bone with your fingers.

  6. If the turkey is not drawn, cut around the vent, lift off the skeleton, and remove the contents.

  7. Wash the skeleton pieces and cook in slightly salted water for 3-4 hours to extract flavor and gelatin.

  8. Fill the boned turkey with your choice of meats and ingredients.
