Why it works: Parsley and lemon match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,037 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Baked Bream and Egg Sauce

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Wash the bream and grease a baking sheet with dripping.

  3. Place the bream on the baking sheet and squeeze a few drops of lemon juice over it.

  4. Cover the fish with a piece of paper greased with dripping.

Bake and serve

  1. Bake for about 20 minutes, or longer if the fish is large.

  2. Remove the skin and fins from the fish and place it on a serving dish.

  3. Pour the white sauce over the fish, ensuring it is thick enough to coat.

  4. Finely chop the parsley and hard-boil the egg.

  5. Cut the egg in half, chop the yolk or sieve it, and chop the white.

  6. Arrange the egg and parsley in alternate rows over the fish and garnish with lemon slices.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bream
Is the main protein that is baked whole and flaked when served.
White sauce
Adds moisture and a creamy coating that keeps the fish from drying out.
Hard-boiled egg
Adds a firm, chopped texture and a mild richness to the sauce topping.
Chopped parsley
Adds fresh aroma and a green colour contrast to the dish.

The step that matters

Covering the fish with greased paper before baking. The paper shields the surface from direct heat, so the fish cooks gently and stays moist rather than drying out or browning too quickly.

“What each ingredient does” and “The step that matters” were written by Claude from this recipe’s own method and reviewed in samples by CompKitchen.
