Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Oysters
Provide the main ingredient and savory flavor of the dish.
Bread crumbs
Form the layers that soak up butter and liquor, giving the dish body.
Butter
Adds richness and moisture, and helps the crumbs brown in the oven.

The step that matters

Pour the boiled liquor over the oysters and cover for 5 minutes. Gently poaching the oysters in their own hot liquor firms them without toughening. Overcooking them makes them rubbery and dry, so the timing matters.

Swap the lemon

How well each one fits the dish's main ingredients (oyster, bread, butter, pepper):

  1. Lemonthe original
  2. Figfits about as well
  3. Plumfits less well
  4. Grapefits less well

Fit is the average pairing score against oyster, bread, butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
