Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Thickens the milk and butter into a smooth sauce that binds the fish.
Butter
Adds fat and richness to the sauce, softening its texture.
Milk
Forms the liquid base of the sauce that holds the fish together.
Cold fish
Provides the main body and flavor of the rissole.

The step that matters

Cooling the mixture before shaping. The sauce must be cool and firm enough to hold its shape. If it is still warm and soft, the balls will slump and may break apart in the hot fat.

Swap the parsley

How well each one fits the dish's main ingredients (fish, butter, milk, flour, anchovy, pepper, bread):

  1. Capersfits about as well
  2. Parsleythe original
  3. Nutmegfits about as well
  4. Thymefits less well

Fit is the average pairing score against fish, butter, milk, flour, anchovy, pepper, bread. Candidates are from the same food group and used in at least 100 recipes.
