  1. Fry the fish in egg and bread crumbs until golden.

  2. Slice and fry the onion until soft.

  3. Layer the fried onion and fish in a baking dish.

Make the sauce and bake

  1. Cover with stock and add cloves, peppercorns, and mace.

  2. Cover the dish and bake in a 350°F (175°C) oven for 1 hour.

  3. Mix flour and ketchup together and stir the mixture into the sauce.

  4. Return to the oven for 10 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Fish
Forms the main body of the dish and becomes tender during slow baking.
Egg
Binds the bread crumb coating so it adheres to the fish while frying.
Flour
Thickens the sauce so it clings to the fish instead of running off.
Stock
Provides the liquid that gently cooks the fish and forms the base of the sauce.
Onion
Adds sweetness and savoury aroma as it softens in the frying pan.
Ketchup
Adds sweetness, acidity and colour to the sauce.

The step that matters

Stirring the flour and ketchup mixture into the sauce. Flour added to hot liquid can form lumps if it is not fully mixed first. Blending it smoothly into a paste or whisking it in gradually gives an even, glossy sauce.

Swap the mace

How well each one fits the dish's main ingredients (fish, clove, flour, ketchup, onion, egg, bread):

  1. Capersfits better
  2. Nutmegfits better
  3. Allspicefits better
  4. Macethe original

Fit is the average pairing score against fish, clove, flour, ketchup, onion, egg, bread. Candidates are from the same food group and used in at least 100 recipes.
