What each ingredient does

Rump steak
Wraps around the stuffing and becomes tender during the long, gentle simmer.
Veal seasoning
Forms the savory filling that flavors each rolled olive from the inside.
Stock
Provides the cooking liquid that moistens the meat and becomes the base of the gravy.
Onion
Adds savory sweetness and aroma to the stock as it simmers.
Carrot
Adds subtle sweetness and body to the stock and gravy.

The step that matters

Simmer gently for 1.5 hours. A gentle simmer lets collagen in the rump steak slowly break down into tender meat. A hard boil toughens muscle fibres and can make the olives fall apart.

Swap the onion

How well each one fits the dish's main ingredients (veal, carrot):

  1. Parsnipfits better
  2. Turnipfits better
  3. Leekfits better
  4. Onionthe original

Fit is the average pairing score against veal, carrot. Candidates are from the same food group and used in at least 100 recipes.
