Why it works: Pepper and carrot match in chemistry and in kitchens. They rank in the top 6% of all ingredient pairs, and cooks put them together in 14,555 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweetbreads
Main protein; the long simmer makes them tender and soft.
Flour
Light coating on the sweetbreads and thickener that gives the gravy body.
Butter
Fat for frying that carries flavour and helps the flour coating brown lightly.
Gravy
Liquid base of the dish that provides moisture and savoury flavour.
Onion
Softened in the pan to add sweetness and aroma to the gravy.

The step that matters

Simmer gently for one hour. A gentle simmer cooks the sweetbreads through and keeps them tender. A hard boil toughens the delicate proteins and can break up the coating and gravy.

Swap the onion

How well each one fits the dish's main ingredients (pepper, butter, flour, carrot):

  1. Parsnipfits better
  2. Turnipfits better
  3. Leekfits better
  4. Onionthe original

Fit is the average pairing score against pepper, butter, flour, carrot. Candidates are from the same food group and used in at least 100 recipes.
