Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Form the bulk of the balls and give them a soft, moist interior.
Eggs
Bind the potato into a paste and form a coating that helps crumbs stick.
Butter
Adds richness and fat, carrying flavour and helping the mixture stay moist.
Bread crumbs
Form a crisp outer crust that browns when fried.

The step that matters

Cool the paste before shaping. A warm, soft paste is sticky and hard to roll, and it can fall apart or absorb too much egg and crumb. Cooling lets it firm up so the balls hold their shape through frying.

Swap the potato

How well each one fits the dish's main ingredients (egg, butter, bread, pepper):

  1. Capsicumfits better
  2. Asparagusfits better
  3. Chivefits about as well
  4. Potatothe original

Fit is the average pairing score against egg, butter, bread, pepper. Candidates are from the same food group and used in at least 100 recipes.
