Why it works: Lettuce and beetroot match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 678 recipes. Both carry 2-isobutyl-3-methoxypyrazine, which smells green bell pepper, earthy. The science ↓

Egg Salad

Ingredients

Directions

Prepare

  1. Boil the eggs in water for 15 minutes.

  2. Plunge the eggs into cold water until completely cool.

  3. Peel the eggs and cut them into quarters.

  4. Wash and clean the watercress and lettuce, then cut them into pieces.

Assemble and serve

  1. Layer the lettuce at the bottom of a bowl, followed by a layer of eggs dipped in dressing, then another layer of lettuce and eggs, repeating until all ingredients are used, leaving plenty of lettuce for the top.

  2. Garnish with sprigs of watercress and slices of beetroot alternately.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Provide the main protein body and structure of the salad, with a firm, tender texture when cooked.
Lettuce
Forms the crisp, moist base and layers that give the salad its fresh texture.
Mayonnaise or salad dressing
Adds moisture, richness and fat that coat the eggs and bind the layers together.
Beetroot
Adds colour and a mildly sweet, earthy flavour to the garnish.

The step that matters

Plunge the eggs into cold water until completely cool. Chilling the boiled eggs quickly stops the cooking, so the yolks do not overcook and turn grey-green, and the eggs become easier to peel cleanly.

Swap the lettuce

How well each one fits the dish's main ingredients (egg, watercress, beetroot):

  1. Horseradishfits better
  2. Lettucethe original
  3. Chivefits about as well
  4. Shallotfits less well

Fit is the average pairing score against egg, watercress, beetroot. Candidates are from the same food group and used in at least 100 recipes.
