Cream Filling

Ingredients

Directions

Make the filling

  1. Dissolve gelatine in cold water over hot water.

  2. Add powdered sugar to whipped cream, then mix in gelatine and beaten egg whites.

  3. Stir until the mixture thickens.

Assemble and chill

  1. Pin a collar of buttered paper around the first layer of cake, extending it ½ inch above the top.

  2. Spread a layer of cream on the cake, filling in the collar.

  3. Alternate layers of cake and cream until all cake is used.

  4. Cover with plain icing and refrigerate until cold, then remove collars.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the whipped cream and egg white mixture so the filling holds its shape between cake layers.
Whipped cream
Adds richness and a light, airy texture to the filling.
Egg whites
Whipped into the filling to add lightness and volume.
Powdered sugar
Sweetens the filling and dissolves smoothly into the cream.

The step that matters

Stir until the mixture thickens. Gelatine must be fully dissolved and the mixture cooled enough to thicken evenly; if it is too hot or unstirred, the filling can stay runny or set in lumps and fail to hold between layers.
