Why it works: Pepper and parsley match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Fluffy Omelet

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Separate the eggs.

  2. Beat the yolks and mix in salt, pepper, and water.

  3. In a separate bowl, beat the egg whites with a little salt until stiff peaks form.

  4. Gently fold the beaten egg whites into the yolk mixture.

Cook

  1. Melt the butter in a hot omelet pan.

  2. Pour the egg mixture into the pan and spread evenly.

  3. Shake the pan gently over the flame until the omelet is slightly brown.

  4. Transfer the pan to a 400°F (200°C) oven to cook the top until set.

  5. Check doneness by inserting a knife into the center; it should come out clean.

  6. Fold the omelet and slide it onto a hot plate.

  7. Garnish with parsley and serve immediately.

What each ingredient does

Eggs
Whites trapped as foam give the omelet its light, airy structure, while yolks add richness and set to a tender texture.
Butter
Melted in the hot pan, it coats the surface to prevent sticking and adds richness and browning.
Water
Adds moisture that turns to steam during cooking, helping the omelet stay tender and puffed.

The step that matters

Folding the beaten egg whites into the yolk mixture. Overmixing collapses the air bubbles in the whites, which are what make the omelet fluffy. Fold gently with a spatula so the foam stays intact.
