Ingredients

Directions

Make the nougat

  1. Put the confectioner's sugar in a saucepan and stir constantly over medium heat until melted.

  2. Add the chopped almonds and pour the mixture onto an oiled marble surface.

  3. Fold the mixture with a broad-bladed knife, keeping it in motion as it spreads.

  4. Divide the mixture into four parts and shape each part into long rolls about ⅓ inch in diameter.

  5. Keep the rolls in motion until they are almost cold, then snap them into pieces 1½ inches long.

Dip and finish

  1. Melt the confectioner's chocolate over hot water and beat until light and smooth.

  2. When slightly cooled, dip the nougat pieces in the chocolate using a two-tined fork or bonbon dipper.

  3. Remove the dipped pieces to oiled paper, drawing the dipper through the top to leave a ridge.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Confectioner's sugar
Melts to form the caramel-like base that sets into the chewy nougat body.
Blanched almonds
Add texture and crunch through the chewy sugar mass.
Confectioner's chocolate
Forms a smooth, glossy coating that adds flavor and a firm outer shell.

The step that matters

Keep the rolls in motion as they cool. Sugar mixtures cool and crystallize quickly; if left still while warm they set hard and grainy, so continuous handling keeps the nougat smooth and shapeable until nearly cold.

Swap the almond

How well each one fits the dish's main ingredients (sugar, chocolate):

  1. Hazelnutfits about as well
  2. Almondthe original
  3. Peanutfits about as well
  4. Chestnutfits about as well
