What each ingredient does

Salt pork
Its rendered fat carries flavor through the chowder and gives the base richness.
Potatoes
Their starch thickens the broth slightly and gives the chowder body.
Cracker crumbs
They absorb liquid and thicken the milk added at the end, adding body.
Milk
Adds creaminess and mild sweetness, mellowing the tomato acidity.
Tomatoes
Add acidity and savory depth that balance the milk and pork fat.
Clams
Provide the main seafood flavor and brininess to the broth.

The step that matters

Adding the milk and cracker crumbs. Milk can curdle or scorch if boiled for long, and cracker crumbs thicken unevenly if added too early. Adding both just before serving keeps the milk smooth and the texture even.

Swap the celery

How well each one fits the dish's main ingredients (pork, milk, clam, potato, onion, tomato, pepper):

  1. Garlicfits better
  2. Thymefits about as well
  3. Celerythe original
  4. Parsleyfits about as well

Fit is the average pairing score against pork, milk, clam, potato, onion, tomato, pepper. Candidates are from the same food group and used in at least 100 recipes.
