Roast Turkey

Ingredients

Directions

Prepare the turkey

  1. Select a plump turkey, then draw and wash it thoroughly.

Make the stuffing

  1. Tear the bread into pieces and season with salt, pepper, butter, and sage to make stuffing.

  2. Add the chopped onion, celery, and hulled, scalded chestnuts to the bread mixture.

  3. Stir in the beaten egg and enough hot water to moisten the stuffing without making it pasty.

Stuff and roast

  1. Place the apple in the turkey's crop to keep it moist and enhance flavor.

  2. Do not allow the turkey to brown much during the first hour of cooking.

  3. Roast the turkey for a total of 3 hours.

What each ingredient does

Turkey
Its meat and skin form the main dish, cooking to a firm, savory texture.
Bread
Provides the body of the stuffing and soaks up moisture and butter.
Egg
Binds the stuffing so it holds together when served.
Butter
Adds fat for richness and helps the seasoned bread brown lightly.
Apple
Adds moisture and a mild sweetness to the bird as it roasts.

The step that matters

Keeping the turkey pale during the first hour. Skin browns faster than the meat cooks through. If the turkey colors too much early on, the skin can darken and dry out before the thickest parts reach doneness. Limiting browning in the first hour lets the bird cook more evenly.

Swap the onion

How well each one fits the dish's main ingredients (turkey, bread, chestnut, butter, celery, egg, apple):

  1. Shallotfits better
  2. Chivefits better
  3. Lettucefits better
  4. Onionthe original
