Crystallized Apples

Oven, in the book's wordsA hot oven

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Peel and core the apples, then slice them into three pieces (circles).

  2. Boil sugar and water to make a syrup for 20 minutes.

  3. Add the apple slices to the syrup, placing them flat in the pan in a single layer.

  4. Put a small piece of butter in the center of each apple ring.

  5. Bake in a 400°F (200°C) oven and serve cold.

Recipe from a historical cookbook (Internet Archive).

Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
