Chocolate Pie

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the custard

  1. Preheat the oven to 350°F (175°C).

  2. Beat the egg yolks thoroughly, then stir in the sugar, chocolate, and cornstarch.

  3. Add the milk and melted butter, mixing well.

  4. Pour the mixture into a single pie crust and bake until the custard is set.

Top and brown

  1. Beat the egg whites until stiff, adding 4 tablespoons of sugar to make the meringue.

  2. Spread the meringue over the pie and return to the oven until lightly browned.

What each ingredient does

Eggs
Yolks thicken the custard and whites whip into the meringue that tops the pie.
Sugar
Sweetens the filling and stabilizes the whipped egg whites in the meringue.
Cornstarch
Thickens the custard so it sets into a sliceable filling.
Milk
Provides the liquid base that the eggs and cornstarch set into a creamy custard.
Chocolate
Gives the filling its chocolate flavor and dark color.
Butter
Adds richness and a smoother, softer texture to the filling.

The step that matters

Beat the egg whites until stiff. Any trace of yolk or grease prevents the whites from whipping fully, so the meringue may stay soft or weep. Beating in the sugar gradually helps it hold its shape.
