Stuffed Green Peppers

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Cut off the ends of the peppers and remove the seeds and surplus inside, then soak the peppers in cold water.

  3. Boil a small young fryer chicken until tender, then allow it to cool in the broth.

  4. Remove the meat from the chicken and chop it finely.

Fill and bake

  1. Mix the chopped chicken, celery, tomatoes, corn, bread crumbs, butter, salt, and pepper in a bowl.

  2. Add the cream sauce to the mixture and stir well.

  3. Stuff each pepper with the filling and sprinkle with crushed cracker crumbs.

  4. Add a little water to the baking dish to prevent sticking.

  5. Bake for 30 minutes.
