Ingredients
Directions
In a saucepan, heat the mixture until thickened, then add crushed ratafias and orange zest.
Sweeten with sugar and blend thoroughly.
Turn the mixture onto a slab and pat it into a flat cake about ⅜ inch thick; let it rest to firm up.
Once firm, cut into small rounds or ovals using a cutter.
Dust with flour, dip in beaten egg, and roll in finely crushed ratafias.
Fry in boiling fat a few at a time until golden, then drain and dry on a hot napkin dusted with sugar.
Serve with apricot syrup sauce if desired.
