Canapes of Sardines

Ingredients

Directions

  1. Cut 9 round slices from the stale madeira cake, each 2.5 inches in diameter and 0.375 inches thick.

  2. Fry the cake slices in butter until golden, then dust with sifted sugar and dry in the oven.

  3. Let the cake slices cool and arrange them in a circle on a flat dish.

  4. Drain the preserved peaches and turn the syrup into a thick glaze by adding apricot jam and flavoring with madeira.

  5. Cool the glaze and then coat the peaches with it.
