Ingredients

Directions

Prepare the filling

  1. Flatten the boned beef ribs and dust with salt and pepper.

  2. In a bowl, mix the grated bread, flour, minced suet, salt, and white pepper. Add milk gradually to form a firm dough.

  3. Roll the meat around the dough and skewer to hold its shape.

Stew and serve

  1. Place 1 pint of water in a stew pan and add the meat. Cover the meat with 4 ounces of minced suet and season with pepper and salt.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef ribs
Provide the main meat that becomes tender during long, gentle stewing.
Bread
Absorbs liquid and binds the stuffing so it holds together while cooking.
All-purpose flour
Thickens the stuffing dough and helps it hold its shape.
Minced suet
Adds fat that keeps the stuffing moist and enriches the gravy.

The step that matters

Rolling and skewering the meat. If the meat is rolled loosely or skewered poorly, the stuffing can escape into the stew. Firm, even rolling keeps the filling enclosed while the meat softens during gentle simmering.

Swap the white pepper

How well each one fits the dish's main ingredients (beef, bread, flour, mutton, milk, pepper):
