What each ingredient does

Raspberries
Provide the main fruit flavour and aroma, along with colour and the juice that gives body.
White wine vinegar
Extracts the raspberry flavour and adds the sharp acidity that defines the finished vinegar.
Loaf sugar
Sweetens the vinegar and balances its acidity, and helps preserve the finished syrup.

The step that matters

Skimming while boiling with the sugar. Foam and impurities rise to the surface as the sugar dissolves and the mixture boils. Skimming them off keeps the vinegar clear and clean-tasting.
