What each ingredient does

Bread
Toasted bread gives the water its color and a mild toasty flavor as it steeps.

The step that matters

Toast the bread until brown, but do not burn it.. Browning the bread develops toasty flavor compounds, while burnt bread turns bitter and carries that bitterness into the water.
