Why it works: Fennel and coriander match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 426 recipes. Both carry myristicin, which smells spice, warm. The science ↓

Artichokes

Ingredients

Directions

  1. To prepare artichokes, steep the seeds in a mixture of honey and milk for mild flavor.

  2. Eat raw artichokes with chopped hard boiled eggs, garum, and oil.

  3. For a sharper sauce, mix green mint, rue, Greek fennel, coriander, pepper, alisander, honey, garum, and oil.

  4. Boil artichokes and serve with cummin, pepper, gravy, and oil.

  5. To preserve, half cook artichokes, separate the leaves, and place the fleshy part in cold water to firm up.

  6. Dry the artichokes on hurdles and bake them four times in the oven after removing bread.
