To Prepare Hung Beef

Ingredients

Directions

  1. Hang the beef for 3-4 days until tender, ensuring it does not spoil.

  2. Salt the beef using either dry salting or a brine made with coarse sea salt, brown sugar, saltpetre, pepper, and allspice.

  3. Roll the salted beef tightly in a cloth.

  4. Hang it in a warm place for at least two weeks until sufficiently hard.
