Sauerkraut

Why it works: Cabbage and pepper are a kitchen classic. They rank in the top 5% of all ingredient pairs, and cooks put them together in 4,081 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Ingredients

Directions

Prepare the cabbage

  1. Remove the outer leaves from the cabbages and cut them into fine shreds.

  2. Spread the shredded cabbage on a cloth in the shade.

Pack the cask

  1. Select a cask that has contained vinegar or rub the inside with vinegar.

  2. Add a layer of salt to the bottom of the cask.

  3. Mix caraway seeds with the cabbage shreds and pack them into the cask in layers, adding salt between each layer.

  4. Stamp down the cabbage as you pack it to reduce its volume by half.

  5. Top with more salt and some outer cabbage leaves.

Ferment

  1. Place the head of the barrel on top and weigh it down with heavy stones.

  2. Tread the cabbage down with clean wooden shoes to aid fermentation.

  3. Replace any green, muddy juice that rises to the surface with fresh brine after fermentation is complete.

What each ingredient does

White winter cabbages
Provides the main bulk and the sugars that ferment into sour flavour.
Coarse sea salt
Draws out moisture and keeps spoilage microbes in check while fermentation proceeds.
Caraway seeds
Adds an aromatic, earthy flavour that complements the sour cabbage.

The step that matters

Packing and weighting the cabbage. Salt must be layered evenly and the cabbage firmly packed and pressed under weight so it releases its juices and becomes submerged in brine. Exposure to air lets spoilage organisms grow, while lactic acid bacteria need the anaerobic, salty conditions to ferment safely.

Swap the caraway

How well each one fits the dish's main ingredients (cabbage, pepper):

  1. Dillfits better
  2. Parsleyfits better
  3. Celeryfits better
  4. Carawaythe original

Fit is the average pairing score against cabbage, pepper. Candidates are from the same food group and used in at least 100 recipes.
