Prepare the stock

  1. In a pot, stew the giblets in water with herbs, onions, shallots, allspice, pepper, and salt until nearly done.

  3. Boil the remaining liquid with vegetables for an hour.

  4. Strain the liquid and remove the fat from it.

  5. Add beef stock to the strained liquid.

Finish the soup

  1. Return the giblets to the liquid and simmer until the giblets are cooked through.

  2. Thicken the soup with butter and flour.

  3. Season the soup with cayenne pepper, lemon juice, and sherry if desired.

What each ingredient does

Giblets
Provide the main meat and body of the soup as they cook and release flavour into the liquid.
Flour
Thickens the soup when cooked with butter, giving it a fuller body.
Butter
Combines with flour to form a roux that thickens the soup and adds richness.
Beef stock
Adds savoury depth and body to the soup base.
Lemon juice
Adds acidity that brightens the rich flavour of the soup.

The step that matters

Thicken the soup with butter and flour. Flour needs to be cooked in fat before or while it meets liquid; adding it raw or in clumps leaves a pasty texture and floury taste, so it should be whisked smoothly into the hot soup.

Swap the onion

How well each one fits the dish's main ingredients (shallot, allspice, pepper, beef, butter, flour, lemon):

  1. Leekfits better
  2. Chivefits better
  3. Arrowrootfits better
