Eel Soup

Ingredients

Directions

Prepare the base

  1. Cut the onions in half and make cross cuts on them.

  2. Melt the butter in a stew-pan and add the onions, stirring until lightly browned.

  3. Cut the eels into pieces and add them to the stew-pan, shaking for 5 minutes.

  4. Pour in the boiling water and remove any scum that forms.

  5. Add the winter savory, lemon thyme, parsley, allspice, and black pepper.

Simmer and strain

  1. Cover and let it boil gently for 2 hours, then strain and skim the soup clean.

Thicken and serve

  1. In a separate pan, melt 3 ounces of butter and stir in enough flour to make a thick paste.

  2. Gradually add the strained soup to the paste, letting it simmer for 10 minutes, then pass it through a sieve.

  3. Serve the soup with small square pieces of fried fish, such as eels, soles, plaice, or skate.

What each ingredient does

Eels
Give the soup its main body and rich flavour as they cook down.
Onions
Add sweetness and depth when browned in butter before the liquid goes in.
Butter
Carries the onions' flavour and enriches the soup as a fat.
Flour
Thickens the strained soup into a smoother, more body-filled texture.

The step that matters

Skimming the scum and straining the soup. Scum that forms when the liquid first boils can cloud the broth and taste bitter, so removing it keeps the soup clear and clean-flavoured.
