In a clean saucepan, combine the squeezed bread with chopped parsley, green onions, and button mushrooms.
Moisten with veal stock and cook over low heat, stirring with a wooden spoon until nearly dry.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- French roll
- Bread soaked in milk forms the body of the panada, giving it a soft, binding base.
- Milk
- Moistens the bread so it softens and can be pressed and cooked into a smooth paste.
- Veal stock
- Adds savoury flavour and moisture while the bread mixture cooks down.
- Egg yolks
- Enrich the mixture and help bind it once cooled, adding richness and structure.
The step that matters
Cook until nearly dry. Cooking the bread and stock over low heat with constant stirring drives off excess moisture. If the panada stays wet, the mixture will be loose and may not bind well with the meat.
Swap the parsley
How well each one fits the dish's main ingredients (milk, veal, onion, mushroom, butter, egg, meat):
- Thymefits about as well
- Garlicfits about as well
- Parsleythe original
- Nutmegfits about as well
Fit is the average pairing score against milk, veal, onion, mushroom, butter, egg, meat. Candidates are from the same food group and used in at least 100 recipes.
